Sushi Rice Vinegar

Seasoned rice vinegar for making authentic sushi rice

Serves: Makes enough vinegar seasoning for multiple batches of sushi rice

Ingredients

200 ml rice wine vinegar
75 g brown sugar
37.5 g kosher salt
1 small piece kombu

Instructions

Combine all ingredients in a saucepan

Heat gently over low heat until sugar and salt dissolve

Do not boil

Remove kombu before cooling

Let cool to room temperature before using

Notes

Store in an airtight container in the refrigerator
Use when preparing sushi rice for best results
